Creamy Chicken

This is a weekly staple for us. In my fat loss and nutrition groups we cycle our carbs. Meaning some days are low in carbs and some days are high in carbs. This meal is wonderful for both! You can pair this creamy chicken with veggies for low carb day, or pair with rice and veggies for a higher carb day. Go TRY THIS and tag me @sallyspringob on socials so I can see you enjoying it too.
INGREDIENTS
6oz Chicken Breast
1/4 onion chopped
other veggie options; 1/4 Bell pepper, green beans, jalapenos, peas, capers. Or any other veggie you like will work
1/2 cup of cooked rice
2 TBS Mayonaise
1 tsp lemon juice or white vinegar
Salt, Pepper, garlic powder, paprika
1 TBS olive oil
DIRECTIONS
Stir together mayo, lemon juice, and seasonings and set aside
Cut chicken into bite size cubes
Put a pan on medium heat
add olive oil then onions and veggies. cook a bit less than half way
Add Chicken to pan and cook until chicken is cooked through.
Stir in the mayo mixture and cook for about 2 more minutes.
Serve on cooked rice.
