Buffalo Chicken KFC Bowl

My top 5 favorite meals. This is our take on the KFC famous bowl. So much better for you and the flavors are on point!!! Add this to your regular weekly rotation instead of going through a drive thru. Go TRY THIS and tag me @sallyspringob on socials so I can see you enjoying it too.

Ingredients

6oz boneless chicken breast (or 6 oz of frozen popcorn chicken)

2 Medium Yukon Gold potatoes mashed (or any mashed potatoes you got)

1/4 cup of sweet corn cooked

1 TBS hot sauce

2 tsp dairy free butter

1 tsp coconut aminos

Directions

1.Cut chicken into bite size cubes.

2.Gently boil potatoes until soft, then peel and mash. Add about 1 TBS dairy free butter, 1 TBS olive oil, pinch of salt and pepper, 1 tsp garlic powder and about 1/4 cup of the cooking water to the potatoes for a creamier mashed potato.

3.Heat a medium size pan on medium heat and add a little oil. Add in cube chicken and cook through. Once fully cooked remove from pan and set aside. Add butter to pan and once melted add the hot sauce and coconut aminos. whisk together until hot then toss in cooked chicken.

4.Add mashed potatoes to bowl then add on top the buffalo chicken and corn. Add any other desired toppings, such as, Jalapeños, onions, gravy, cheese, ect.
