I was not the kid that grew up on grandmomma’s best picks from the garden. We were your average hamburger helper, pot roast and ‘what’s on the grill’ kind of a family. Ohhhh- and I have always been a pizza girl too. So- for me to fall in love with vegetables was a SHOCKER. This blend hit all the spots for me though…. mmmm and I love to pair it with a good crunchy blue corn tortilla chip or thrown in a rice bowl with chicken. Seriously- go try this thing! It’s super simple to make and even easier to pack and take! Check out the ingredient list and mixing instructions for best storage. Don’t forget that lime juice.. it really pulls it all together and keeps things from browning. PRO TIP: it is always better after sitting 12-24 hours in the juices before serving.


Ingredients:

  • 6 roma tomatoes diced

  • 1 bell pepper seeded & diced

  • 1 medium onion finely diced

  • 2 jalapeño peppers seeded and finely diced

  • 1 large avocado peeled, pitted & diced

  • 1 cooked cob of corn (or 1 can)

  • 1 15 oz can black beans well rinsed & drained

  • 1/2 bunch cilantro (1/2 cup chopped)

  • 3-4 tbsp lime juice

  • 1/2 cup Italian dressing

  • 4 medium garlic cloves pressed

  • 1 tsp pink salt or to taste

Instructions:

Mix together the roma tomatoes, bell pepper, jalapeño peppers, avocado, corn, black beans, and cilantro in a large mixing bowl first. Then one at a time, add in the lime juice, Italian dressing, garlic gloves and salt.

Let sit for 12 hours in fridge and then serve with your fave pairing> chips, tacos, eggs and more!
