Dad’s pancakes (gluten free/dairy free)

These delicious pancakes are a weekly staple for our home. Our daughter enjoys waking up on Friday mornings and making pancakes with her daddy. She has his full attention as they make a mess in the kitchen together. I love watching her squish blueberries and raspberries on the tips of her fingers, and hearing the sounds of her giggles as she adds more chocolate chips.

DRY INGREDIENTS

1.5 cup GF flour (we use King Arthur brand)

3 tbsp sugar 

1.5 tsp baking powder 

1 tsp baking soda 

1 tsp salt

1 tsp cinnamon 

1 tsp nutmeg 

1 scoop protein powder (we use Faster Way)

WET INGREDIENTS

1.25 cup DF milk (we use oat or coconut milk)

2 eggs 

1 tsp vanilla extract 

3 tbsp melted coconut oil 

1/2 tbsp white vinegar 

DIRECTIONS

Mix dry ingredients in a bowl. Mix wet ingredients in separate bowl.

Combine the wet ingredients into the dry ingredients and mix. Then pour on the griddle or pan, and cook!

Add your fave toppings. Pair with protein of choice; We like bacon, eggs or sausage.
